One reason I enjoy sharing recipes at Peppermints and Cherries is to help me organize and remember some of my favorite recipes! My sister-in-law recently mentioned how helpful she finds them, and I hope my other readers feel the same.
Today I’m featuring my recipe, Beef Tips and Broccoli for the Favorite Family Recipes Blog Hop. This is a quick and delicious meal that is easy for those weeknight dinner meals when you’re pressed for time.
Ingredients for Beef Tips and Broccoli Recipe:
beef tips (approx. 2 lbs.)
1 can cream of celery
reduced sodium soy sauce
Time Saving Tip: I often buy a bag of frozen onions and peppers. It contains onions and multi-colored peppers (red, green, orange, and yellow) cut into strips.
Combine onion, peppers, beef tips, and cream of celery and add to a glass dish. Drizzle with soy sauce. Cover with foil and bake at 375 degrees Fahrenheit until beef tips are completely cooked.
While the beef tips are in the oven, steam or boil broccoli until tender and toss into the beef tips before serving. Serve with rice, and your easy weeknight dinner is complete!
