Easy Stovetop Lasagna Recipe for Busy Mamas

It has been quite a while since I shared a new recipe, and what better type of recipe to share than an Easy Stovetop Lasagna?!!! We are halfway through the year, and I have been cooking up a storm the last few months due to social distancing.

We enjoy eating together as a family, and I usually prepare most of our meals at home. Under normal circumstances, we generally eat out about twice a week. Sometimes it’s just nice to get a break from the kitchen! And all mamas said, Amen!

For two solid months, my family didn’t eat out at all due to social distancing. Finally, in mid-May we ventured out to a local hamburger restaurant one night after drive-up church because we were just craving a hamburger! We ate our tasty burger and fries in the car and had a great time! We have eaten out a few times since then, but I still have a full-time job in the kitchen. No worries there!

One of my family’s favorite dinner entrees is Stovetop Lasagna because it’s quick and easy to prepare!

Serve this Easy Stovetop Lasagna for Busy Mamas alone or with salad and bread of your choice. In just under an hour, busy mamas will have a warm comfort meal on the table for their families to savor.

The cleanup is easy since everything is prepared in one pot, and the best part is that we usually have leftovers for a second meal!

Ingredients for Stovetop Lasagna

Ingredients for Stovetop Lasagna Recipe:

frozen peppers and onions (red, yellow, green, and orange peppers)

1 ½ lbs. lean hamburger meat (browned)

28 oz. can diced tomatoes

1 box oven-ready lasagna noodles

45 oz. tomato, garlic, and onion spaghetti sauce

2 c. parmesan cheese

1 or 2 16 oz. low fat cottage cheese

2-4 c. mozzarella cheese

Directions to Prepare Stovetop Lasagna:

1. Briefly sauté the onions and peppers on the stovetop.

2. Add the browned hamburger meat to the sautéed peppers and onions. (I like to brown the hamburger meat ahead of time and freeze it for quick prep.)

3. Pour the diced tomatoes over the meat and onion/pepper mixture. Stir.

4. Break the lasagna noodles into small pieces and add to mixture. Add spaghetti sauce. Stir and cover with a lid. Cook on medium heat until the lasagna noodles are fully cooked. Stir often. While the lasagna is cooking, add the parmesan cheese, stir, and cover.

5. Top with cottage cheese and mozzarella cheese, cover, and allow to simmer until the cheese is melted. Enjoy!

Slow Cooker Instructions for Stovetop Lasagna:

*This recipe can also be prepared in the slow cooker. Add all ingredients to the slow cooker except the cottage cheese and mozzarella cheese.

*Cook on low/high until the lasagna noodles are fully cooked (approximately 5 hours). Before serving, stir in cottage cheese and mozzarella cheese. Sprinkle remaining mozzarella cheese on top.

*When I prepare Stovetop Lasagna in the slow cooker, I often add additional spaghetti sauce and/or diced tomatoes.
